Sourced from three discrete Limestone Coast vineyards, care is taken to ensure harvesting, done in the cool of the evening, occurs at the optimum moment to promote varietal characters. Sorting takes place in the vineyard, before a gentle pressing, cool fermentation and three months on yeast lees. 20% of the wine sees barrel fermentation to assist with promoting complexity. This is bright and fresh, as intended, with a hint of spice and even a note like freshly baked pastry. Apples, stonefruit and more, this is a simple and easy drinking style, which is very pleasant. Hints of citrus emerge on the palate.
